Buffalo NY native Vincenza (Zina) Lapi, is also a classically trained Chef (Johnson and Wales) bringing seven years experience to the partnership. She previously lent her talents to the kitchens of Buffalo upscale dining establishments Mike A's at the Hotel Lafayette and Buffalo Proper before traveling most of the world (Europe, Latin America and Asia) learning authentic street fare before bringing back her knowledge to own and operate her widely successful and well received food truck "The Blue Balls Bus" . Lapi is known for lighting up traditional street food (Arancini) by elevating them to new heights with her own creative twists. She is widely acclaimed for her beautiful presentations, flavor combinations and cooking techniques despite very limited resources on a food truck. This will be Lapi’s first brick and mortar restaurant
Parra Gonzalez is former owner operator of the Youngstown NY establishment Jaguar at the Bistro. He is a Mexican born, classically trained chef (Montreal culinary school) who has been pleasing palates for fourteen years. He excels with his elevation and refinery of his native cuisine, as well as showcasing different cooking styles and techniques. Gonzalez has built an enthusiastic following of patrons who have been checking in with him frequently about his new ventures. Gonzalez brings his cultural approach to the food by continuously returning to Mexico to explore the flavors and techniques used in some of the most authentic rituals for the preparation of the food. Although Gonzalez studied at L'Ecoler Hoteliere des Laurentides in Montreal, his drive is to bring forward his Mexican heritage in his culinary Ethos.
